Open bags of roasted beans laid out on a work table.

Six bags.

A scoop of whole beans lifted from an open bag.

Roasted to order. I ask you to rest the bag four days, then grind at the cup.

How I choose.

It has to pull

Every bag runs on my machine first. If the shot fights me, it stays off.

Indian farms

Chikmagalur to the Nilgiris. Short chain, named estate, roasted this month.

It holds with milk

Most of these end up in cortados. The sweetness has to survive steam.

A dose of ground coffee falling into the portafilter.

Or have me pour it.

I bring the cart, the grinder and these same beans.
